Sicily’s Salad with Grilled Shrimp or Chicken

Serves 1-2

Ingredients:
3-4 deveined shrimp, tail off & chopped -or- 1 Cutlet of Chicken
2-3 Cups Iceberg romaine mix
½ Cup Mushrooms
¼ Cup Black olives
¼ Cup Diced tomatoes
¾ Cup Shredded Mozzarella
½ tsp olive oil
4-6 tbsp of Moni’s House, Light or Country Balsamic

Directions:
Place shrimp or chicken into a pan with olive oil and sauté on medium-high heat until shrimp is opaque or chicken is cooked through. (2-3 minutes) Set aside and allow the shrimp to cool down.

Add your olives, mushrooms and tomatoes and lettuce mix into a bowl. Poor 4 tbsp of your preferred Moni’s Dressing and toss in bowl until thoroughly mixed. Place on serving plate and top with mozzarella. Put the shrimp on your amazing creation and drizzle any remaining delicious Moni’s on top.

Moni-Fied Italian Potato Salad

Serves 4-6

Ingredients:

5 large Yukon Gold potatoes
1 large cucumber, chopped
5 stalks celery, chopped
1 large red onion, chopped
3/4 cup green olives with pimento, chopped
1 cup Moni’s Italian Salad Dressing
Salt and ground black pepper to taste

Directions:

Place potatoes in a large saucepan, cover with water, and bring to a boil over high heat. Reduce the heat to medium-low, and simmer until the potatoes are tender, about 15 minutes. Drain and cool, then cut into 1-inch cubes. Combine the potatoes, cucumber, celery, onion, and olives in a large bowl. Pour the dressing over the potatoes and vegetables; mix well. Season with salt and pepper, then chill. Stir the potato salad again before serving.

Moni’s Italian Panzanella Salad

Prep Time: 10 Minutes

Ingredients:

8 cups Italian croutons
8 cups torn romaine lettuce
1 cup fresh mushrooms (baby bellas), sliced
1 jar (7 oz) sweet fire roasted red peppers
8 oz diced black forest ham
½ cup pitted ripe black olives, chopped
½ cup red onion, sliced
1 medium zucchini, sliced (about 1 cup)
1 cup Moni’s Country Italian Vinaigrette
¼ cup grated fresh parmesan cheese

Preparation:

In a large bowl, combine lettuce, mushrooms, peppers, ham, olives, onion, zucchini and croutons. Pour dressing over salad and toss. Top with cheese.

Summertime Strawberry Spinach Salad

Prep Time: 15 Minutes

Cook Time: 1 Hour of Refrigeration

Ingredients:

2 tbsp sesame seeds
1 tbsp poppy seeds
1 cup of Moni’s Italian Country Vinaigrette
1 tbsp minced onion10 oz fresh spinach – rinsed, dried and torn into bite-sized pieces
1 qt strawberries – cleaned, hulled and sliced
1/4 cup blanched and slivered almonds

Preparation:

In a medium bowl, whisk together the sesame seeds, poppy seeds, dressing and onion. Cover and chill for one hour.

In a large bowl, combine spinach, strawberries and almonds. Pour dressing over salad and toss. Refrigerate 10 to 15 minutes before serving.

Moni’s Country Caprese Salad

Prep Time: 15 Minutes

Cook Time: Fresh

Ingredients:

2 large hothouse tomatoes, chopped
1 pkg (8 oz) Fresh Mozzarella, chopped
1/2 cup fresh basil, sliced
1/2 cup Moni’s Country Italian Dressing

Preparation:

Mix all ingredients together in a bowl and enjoy!

For presentation:

Slice the your Fresh Mozzarella ball and tomato into four.  Stack a slice of tomato and a piece of mozzarella on top of each other.  Compete all four pieces and top it with a whole basil stem.  Drizzle Moni’s Country Balsamic Italian Dressing

Tim’s Delicious Kauai Mushrooms

In the farthest reaches of our great land, from Alaska’s rugged interior to the azure waters off Kauai the desire for grilled mushrooms is strong. So strong that Moni himself has searched for the perfect recipe with which to feature his delicious Country blend. This tasty recipe is more revered in the islands than the chickens themselves, and is often served during neighborhood luaus. Moni’s Dressing makes these fungi sing, and they sing “Eat Us”!

Prep Time: 10 Minutes

Cook Time: 15 Minutes

Ingredients:

16 oz of Moni’s Country Salad Dressing
20 White Medium Mushrooms
Bamboo Skewers

Preparation:

Soak the mushrooms for at least 1 hour (the longer the better!)

After soaking, carefully put the mushrooms onto the skewers one at a time. Don’t over pack the skewer, try to leave about a half inch of room between each mushroom so that all sides can get cooked.

Summer Gazpacho with Shrimp

Prep Time: 1 Hour

Cook Time: 10 Minutes

Ingredients:

2 cups finely chopped peeled tomatoes, divided
1 cup finely chopped onion, divided
1 cup finely chopped peeled cucumber, divided
1 cup finely chopped red pepper, divided
1 can (46 oz) V8 juice
½ cup Moni’s Country Italian Dressing
1 pound shrimp, peeled and deveined
Cooking spray

Preparation:

Reserve ½ cup each of the tomatoes, onions, cucumber and red pepper in separate bowl. Cover and refrigerate until ready to use.

Place V8 juice and dressing in blender or food processor container. Add remaining 1 ½ cups tomatoes and ½ cup each onion, cucumbers and red pepper; cover. Blend until smooth. Pour into bowl; cover. Refrigerate at least 1 hour.

Coat a grill pan with cooking spray and heat over medium-high heat or preheat the grill to medium-high and oil the grill rack. Cook the shrimp until pink, about 2 minutes per side. Set aside the grilled shrimp on a plate.

Take gazpacho and reserved vegetables from refrigeration. Serve gazpacho in individual bowls. Then top the gazpacho with the reserved vegetables and shrimp.

Bay Scallop Salad with Moni’s Italian Dressing

Prep Time: 10 Minutes

Cook Time: 20 Minutes

Ingredients:

1 lb. bay scallops
2 Tablespoons olive or canola oil
3 Cloves garlic – minced
½ Shallot – minced
¼ lb. pancetta, chopped fine
1 package cherub tomatoes, quartered
1 package butter lettuce, torn
2 sprigs marjoram, minced
1 small lemon, juiced
8oz Moni’s Italian Country Dressing

Preparation:

For the salad, combine tomatoes, lettuce, herbs, lemon juice and Moni’s Italian Dressing. Mix well and refrigerate.

In saute pan, add oil over medium heat. Add pancetta and cook until slightly crispy, then add garlic and shallots. Cook about 1 minute. Add scallops and continue cooking until scallops are opaque and cooked through, 5-10 minutes.

Serve scallops with salad.

Grilled Pork with Grilled Pineapple Salsa

Prep Time: 25 Minutes

Cook Time: 10 Minutes

Ingredients:

1 ¼ lb. pork tenderloin, sliced into ½ inch thick medallions (or boneless, pork chops)
1 cup fresh pineapple slices
¼ cup Moni’s Country Italian Dressing
2 tablespoons finely chopped red onion
1 tablespoon finely chopped cilantro
1 tablespoon finely chopped seeded jalapeno peppers
Cooking spray

Preparation:

Preheat the grill to medium-high and oil the grill rack

Brush pineapple slices with 2 tablespoons of dressing. Set remaining dressing aside for later.

Grill 3 to 5 minutes on each side until heated through.  Remove pineapple from grill and finely chop pineapple; place in small bowl. Add reserved 2 tablespoons of dressing, onions, cilantro and peppers; mix lightly. Set aside.

Sprinkle the pork medallions (or chops) with salt and pepper. Cook the pork medallions (or chops) thoroughly, about 3+ minutes per side.

Serve pork medallions (or chops) and top with grilled pineapple salsa.

Moni’s Saucy Beef Noodle Skillet

Prep Time: 5 Minutes

Cook Time: 25 Minutes

Ingredients:
1 lb. extra lean ground beef
1 cup edamame, thawed
1 can (14.5 oz) diced tomatoes, undrained
1 cup water
½ cup Moni’s Country Italian Dressing
2 pkg (3 oz each) ramen noodle soup mix, beef flavor
1 cup 2% milk shredded mozzarella cheese

Salt and pepper to taste

Preparation:

Brown meat in large skillet on medium-high heat; drain. Stir in edamame, tomatoes, water and dressing.

Add dry noodles, salt, pepper and 1 packet of beef flavor to skillet. Bring to boil; cover. Reduce heat to low; simmer 5 minutes, stirring occasionally.

Remove from heat. Sprinkle with cheese.
