Cook Time: 2 hours

Ingredients:

  • 1 Small Whole Chicken
  • 1 Beer of Choice – Coors Light, Keystone Light or Peroni
  • Moni’s Famous House Vinaigrette

Preparation:

Take Moni’s Famous House dressing and liquify in mixer or blender to reduce in order to inject chicken

Inject chicken with Moni’s Dressing.

Place whole chicken in zip lock bag. Before sealing bag, pour in Moni’ s Dressing to coat entire chicken.

Place in refrigerator for 24hrs. prior to cooking.

Remove chicken from refrigerator and allow to warm up to room temperature before cooking.

Insert beer can / cooking cup into base of chicken or on a beer can chicken cooking tray

Start smoker with charcoal. Raise temperature to 175 to 225 degrees

Add Apple or Cherry wood for smoke flavor. Continue to add during process for adjusted personal flavor

Spray with Apple Cider and mop with Moni’s Dressing during smoke process

Smoke for about 4 hours or until done. Carve Chicken and enjoy with a tomato and mozzarella Salad and glass of Pino.
